Eating healthy doesnt have to be expensive. Ill admit I do rack up the grocery bill with bars. So I set out to save some dough. My mom bought a Magic Bullet but for this recipe a food processor works well. Almonds, dried raisins, and dried cranberries were on sale, I believe with coupons everything came out to be $6. The cost of one Larabar could be any where from $1.25 to $2.50. Each recipe makes two bars.
First, measure out 1/3 cup of raw natural almonds, 1/4 cup of raisins and 1/2 cup of cranberries.
Next, put in the almonds into the food processor/ Magic Bullet. Pulse for 30 sec and repeat until the almonds are jus about smooth. If using the MB, you may need to manually scrape the sides of it so that the all of the almond mixture mixes well.
Remove that into a large bowl and then add the raisins, followed by the cranberries, or vise versa. After mixing is complete, add all ingredients into the large bowl.
Here’s the fun part. You will now knead the mixture with your hands well so that all the ingredients mix together well. Then shape and form two ‘bars’. Wrap each with cling wrap and refrigerate. Enjoy!
