I love edamame which is why I made sure I stocked up on them. Edamames are an excellent source of protein and fiber, the Whole Foods brand of frozen edamame contains 120 calories, 4 grams of fiber and 13 grams of protein per 1/2 cup serving. I paired them with cucumbers and peppers. Not a very colorful plate since everything was green! By hey, I’m meeting my produce intake more when I’m a vegan then ever before. I finished reading and finished my 1st essay already so its been a very productive day. There’s a new episode of Gossip Girl on tonight which I’m very excited for. 🙂 I’m planning on an earlier bed time then Im use to because I’ve been so tired lately.
